Ingredients

450 g gluten-free spaghetti
1 tsp salt
2 tbsp extra virgin olive oil
2 garlic cloves finely chopped
1 red onion chopped
360 g can of shredded tuna
8 cherry tomatoes cut in half
1 lemon juice only
1 tsp salt
1 tsp pepper
400 g store-bought gluten-free pasta sauce tomato & basil sauce
20 g rucola
a few basil leaves
50 g shaved parmesan

To get started with this simple tuna pasta recipe, you’ll need the following ingredients:

Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until it is al dente. When the pasta is ready, reserve 4 tablespoons of cooking water, and drain the pasta.

Heat the olive oil in a large heavy-based saucepan over medium heat. Add the garlic and red onion and cook for 2 minutes. Then add the shredded tuna, the pasta water and cherry tomatoes. Squeeze the lemon and season with salt and pepper. Cook for 3 minutes.

Add the pasta to the saucepan and immediately add the sauce. Gently toss to combine. Add the rucola and basil leaves, shaving the parmesan and cooking them for 1 more minute. Serve immediately, adding extra Parmesan if liked.
