3 tbsp olive oil
3 tbsp salt
1 tbsp pepper
2 carrots cut into cubes
1 fennel chopped
1 tsp dried thyme
5 g rosemary
12 spears asparagus
100 g cherry tomatoes cut in half
50 g baby spinach
edible flowers to serve

To get started with this simple lamb steak, you’ll need the following ingredients:

Prepare the vegetables and preheat the oven to 180 °C. Wash the meat and transfer it into a large roasting dish. Rub the olive oil, salt and pepper on all sides of the meat.

Add the carrots, fennel, dried thyme and rosemary. Stir everything together, then cover the tin with foil.

Roast in the oven for 30 minutes, remove the foil and add the asparagus, cherry tomatoes and baby spinach, turning the meat.

Put the tray back into the oven and roast for another 45 minutes, turning the meat every 20 minutes. Leave to stand for 5 minutes before serving, and garnish with edible flowers.
