To get started with this quinoa salad, you’ll need the following ingredients:

Dry-fry the almond flakes in a frying pan until golden.

Peel strips out of the skin of the cucumber and slice it in half, vertically. Remove the seeds with a teaspoon and then cut each side into small pieces.

In a bowl, mix the chopped cucumber, cherry tomatoes, green onions, raisins, almond flakes, chopped parsley and the cooked quinoa, gently combining with your fingers. Season with salt, pepper and add the lime juice and olive oil.
