For this gluten free pastry flour mix, you’re going to need the following ingredients:

In a large bowl, combine the white and brown rice flour, alongside the corn and lentil one. Then, add the tapioca, corn and potato starch, followed by the pectin and guar gum.

Start by whisking the mixture, then use a spatula to pull everything off the sides and bring it towards the center of the bowl. Repeat the process for 1-2 minutes, until everything is evenly combined.

Store in an air-tight container for up to 6 months, or depending of the expiration dates of each individual item used in the mix.
