Ingredients

2 tsp extra virgin olive oil
800 g ground beef
2 tsp salt
2 tsp pepper
1 tsp cumin
1 lime juice only
1/2 onion chopped
1 tbsp thyme chopped
500 g tomato sauce
Guacamole
1 avocado cut into cubes
1/2 onion finely chopped
2 tomatoes finely chopped
2 garlic cloves finely chopped
1 sprig parsley finely chopped
1 tsp salt
1 lime juice only
To serve, per tortilla (8 in total)
5 g butter
30 g iceberg salad shredded
30 g corn
10 g shredded cheese
1 tsp chilli sauce
1/4 lime

To get started with this gluten free taco recipe, you’ll need the following ingredients:

Heat the oil in a frying pan over medium heat. Add the ground beef, stir once and drizzle some more oil over the meat. Cook until no longer pink, season with salt, pepper and cumin, stirring constantly.

Squeeze the lime juice then add the onion and thyme. When the meat changes its color, add the tomato sauce and cook for 10-15 minutes, until most of the liquid has evaporated.

For the guacamole, place the cubes of avocado in a shallow bowl. Gently smash them with a fork. Gently fold in the remaining ingredients, combining everything together. Squeeze the lime juice and season to taste.

Fry the tortillas in butter for 1 minute on each side, then transfer them individually to plates. Firstly, spoon the meat in the middle, then cover the layer of meat with guacamole, then the salad, another layer of meat and guacamole, corn, shredded cheese and chilli sauce. Squeeze 1/4 of a lime over the taco, roll up and serve.
