1.8 kg pork flank
2 tsp salt
2 tsp pepper
1 tbsp cumin
260 g or 1 can tomatoes chopped
1 sprig parsley chopped

To get started with this pork stew, you’ll need the following ingredients:

Chop the vegetables, cut the sausages into 1 cm cubes and the pork flank into 2.5 cm cubes.

Heat a large frying pan over medium heat and add the pork cubes. Season with salt and pepper, cover with the lid and cook for 15-20 minutes, stirring occasionally. Sprinkle the cumin and add the sausages, mushrooms and peppers.

Slice the potatoes 2/3 way through and insert the zucchinis in the gaps. Bake for 30 minutes at 180 °C and sprinkle the chopped dill and ricotta salata, 5 minutes before they are done.

Add the chopped tomatoes and parsley, simmering for another 30 minutes. The stew will be done after about 45-50 minutes, or when most of the liquid has evaporated. Serve warm.
