To get started with these gluten free chocolate cones, you’ll need the following ingredients:

Separate the eggs and set aside the yolks. In a clean bowl, whisk the egg whites until stiff. Preheat the oven to 180 °C.

Combine the sugar and yolks in another bowl, sift in the flour and guar gum, gradually incorporating the beaten egg whites. Mix until combined.

Brush a rectangular baking tin with butter, gently dropping 9 teaspoons of the mixture into it. Make sure that there’s enough space between all of them.

Watch them cook, and after just a couple of minutes, when they turn golden, place the tray on the oven door and roll the cones using a sharp wooden object or a clean kitchen cloth, by gently pushing one edge of the circle over the other, in a circular motion. You’ll have to do this as soon as you open the oven’s door, otherwise the mixture will harden. Repeat the process for the remaining batter.

Separate 6 eggs, whisking the yolks and sugar in a bowl using a hand-held electric mixer. In a separate bowl, whisk the butter with the mixer and gradually incorporate the yolks into it. When fully combined, pour the vanilla extract and cacao. Mix for another minute and fill up each of the cones with it.
