50 g cheddar cheese grated

3 slices of ham
1 red pepper chopped

Melt the butter in a small saucepan over medium heat, add the flour and guar gum, stirring once and gradually pouring in the milk. Fold in the grated cheese, season with salt, whisking continuously until a smooth sauce forms. Preheat the oven to 180 °C.

Separate 5 eggs. Using an electric hand-held mixer, beat the whites until firm peaks form. Pour the sauce in a large bowl and gradually incorporate the yolks and beaten egg whites with a whisk or spatula.

Transfer the mixture into a large baking sheet lined with baking paper. Bake initially for 20 minutes.

Remove from the oven and line the following at the base of the sponge: the grated cheese, ham slices, red pepper and parsley, rolling it from the bottom to the top, using the baking paper to seal it off.

Transfer back into the baking sheet and bake for another 5-7 minutes, until the cheese melts. Let it cool for 10 minutes and use a sharp knife to slice it.
