To get started with this avocado soup, you’ll need the following ingredients:

Finely chop the parsley, pepper, garlic cloves and cucumber.

Spoon out the avocado in a food processor, add the vegetables, Greek yogurt and water. Blend them for 2 minutes on medium speed, then add the salt and pepper.

Blend them for another minute. Add some more yogurt if you would like the mixture to be thicker. Transfer the soup into bowls and serve it immediately or cover and store in the fridge.
